Amish Potato Salad

6 med potatoes
3 hardboiled eggs
1 onion
1/2 bunch celery
4 tbsp mayonaise
2 tbsp vinegar
1 tsp mustard
2 tbsp sugar
parsley
celery seed

- mix sugar & mayo together than add mustard , pour vinegar slowly as you stir. Set aside ( You may want to double this depending on how moist you like your salad) Peel & boil potatoes until soft, dice into cubes, chop celerey, onion and hardboiled eggs. Mix all ingrediants together & then pour mayo mixture over & stir thoroughly, add parsley & celery seed to taste. Refrigerate about an hour before serving.

Apple Dumplings with Caramel Sauce

Dough:
2 C. flour
1 tsp. baking powder
1/2 tsp. salt
2 Tbsp. sugar
2/3 C. butter
2/3 C. milk

Caramel Sauce:
1 C. brown sugar
1 C. white sugar
2 Tbsp. flour
pinch salt
1 C. hot water
6 apples
cinnamon

Sift first 4 ingredients, then add butter, milk. Roll dough. Cut apples in 1/2. Fill centers w/ butter, brown sugar, & sprinkle of cinnamin. Cut dough into squares (large enough to wrap around whole apple) Put apple halves back together, and wrap dough around apple.

Sauce: mix sugars, flour & salt, add hot water & cook 5 mins. pour over apples when they are half baked.
350-375 until golden brown, 40-50 mins.

Cucumber Salad

1 cucumber
1 sm. onion
1 Tbsp. mayo
1 Tbsp sugar
1/8 C vinegar & 1/8 C water combined

mix sugar, mayo, water, & vinegar mix throughly. Pour mixture over sliced cucumbers and onions, stir. Refrigerate about an hour before serving.

Grumbire Soup (Potato Soup)

Cube 8 potatoes. Chop 1 onion & boil together until soft. Add 1 quart of milk & heat, beating thourghly. Salt & pepper to taste. Work 1 tbsp. of butter into 1/2 cup of flour. Add 1 well beaten egg & 1/4 cup of cold milk. Add very slowly to the hot milk. Cover & cook 10 minutes. Garnish with chopped parsley. Serves 4.

Pork chops 'n Apple Sauce Gravy

2 c. apple sauce
3 lbs. pork chops
1 tbsp. minced garlic
1/2 c. flour
1 tbsp. salt
1/8 tsp. pepper
3 c. boiling water
1 tbsp. lemon juice

Brown chops in frying pan. Remove to 3 quart casserole. Brown the garlic in remaining fat. Add flour,salt,pepper.Blend. Add water. Cook 'til mixture thickens, stirring constantly. Add apple sauce and lemon juice. Stir. Pour over chops. Bake at 425 'till tender.(about 1 1/2 hours)Serves 8.

Shoo Fly Pie

Make a liquid of the following:
1/2 tbsp. soda dissolved in
1/2 c. of boiling water
1/2 c. molasses
1 egg yolk (beaten well)
Make crumbs of the following:
3/4 c. flour
1/2 c. dark brown sugar
2 tbsp. shortening
1/4 tsp salt
1/2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ginger

Mix dry ingrediants together, then work in the shortening. Line a pie pan with pastry. Fill pastry with alternate layers of liquid & crumbs. Put crumbs on top & bake in hot oven 400 degrees, until edges of crust start to brown. reduce heat to 325 ane bake about 20 minutes more or until firm.

Sweet 'n Sour Green Beans

Combine 1/3 c each of brown sugar,water, and vinegar. Add 1/2 tsp. salt, dash of pepper. Cook until syrupy (about 8 minutes). Add 4 cups cooked green (string) beans. Heat to boiling point. Serves 6-8.
